Eat Your Veggies - Kale Chips!

On Sunday my hubby and I ventured out to the Old Cheney Farmers' Market.

 He loves kolaches, a delightful Czech pastry with a dollop of fruit in the center, so we set out to buy some as a Father’s Day treat.

While at the market, I had the great good fortune to meet Alice Henneman, an Extension Educator for the University of Nebraska-Lincoln Extension in Lancaster County.  I a am a new subscriber to her Cook It Quick Newsletter:

Alice is a true foodie, and I have enjoyed reading her recipes, including this one for spinach lasagna that I’m anxious to try:

The fresh spinach was sold out by the time we arrived at the market, but Alice suggested I try Kale Chips as another fun and easy veggie dish that is grandkid-friendly. 

All you need is a bunch of kale, two teaspoons of olive oil, and some salt (sea salt would be great) or parmesan cheese.  I made a batch, and, sure enough.  You can’t eat just one!  Here is a link to that recipe: Yummo!

  1. Ah, I love farmer's markets - one of the joys of summer! That's an interesting concept of making "chips" from roasted kale; I use it frequently in soups or saute it with olive oil and garlic. It's a versatile green, for sure!

  5. I've not tried making them yet, but the ones I've bought at Whole Foods are tasty. Nacho Kale Chips are my favorite. : )

  6. great! Thanks! I have heard of kale chips, but have not tried any. I'll be heading to the CSA at my friends' farm later today and if they have kale I'll get some and try this.
